Date tRUFFLES

 

 

THESE ARE A MUST TRY!

They are perfect for any occasion, whether it be a school snack or dessert for guests: I always keep a few in my fridge.

 

These little energy balls are filled with everything thats good for you! They are completely natural and almost too good to be true.

 

I brought these to school once and was bombarded with people wanting the recipe. To be fair, this happens with most of the food I bring to school...However, this recipe was especially popular.

 

Perhaps the best thing about these delicious treats is that they are completely sugar free! Dates have been with no a doubt been a huge lifesaver for me. I don't think I could have survived as a vegan for this long without dates... and a food processor. Believe it or not, I hadn't actually tried a date until just over a year ago. Now they are my go to sweetener. 

 
 
 
InGREDIENTS -

Cook time: 0 mins

Servings: 30

 

 

 

10 medjool dates

1/2 cup cocoa powder, plus more for decoration

3/4 cup seeds or nuts*

1/3 cup desiccated coconut, plus more for decoration

1/3 cup water

 

 

 

- Instructions -

 

  • Place the seeds and or nuts in a food processor and process into a fine meal.

  • Add the water and dates and process all the ingredients together. Then add the coconut and process the mixture until it forms a sticy dough. 

  • Using your hands, form the dough into preferred sized balls. 

  • To finish, roll the balls in cocoa powder, desiccated coconut or ground nuts (or a mix of everything!).

  • I prefer placing them in the fridge to harden before eating them, however you can also just eat them straight away.

 

 

 

- Note - 

 

*I usually use a mixture of sunflower seeds and pumpkin seeds, but I have also mixed in almonds. Any nut blend can also be used. 

*Using the blender isn't easy! The food proccesor often overheats, but if you add enough water before adding the dates this shouldnt be an issue.
