Chocolate chip cookie dough BALLS
I have always been a sucker for dough balls, or for dough in general if I'm being honest. I was always the kid who couldn't wait to lick the spoon. As I got older, this love for dough didn't end. So when I became vegan I obviously had to find a recipe for vegan dough balls!
This recipe has been my saviour for the past few months. Whenever I get a craving for something sweet, I can always depend on the batch of ready made dough balls in the fridge to help me out. I try to restrict myself to only having 1, but I would be pleased with myself if I managed to keep it down to 3 at a time.
The delicious bites are filled with nutty protein that will satisfy part of your daily protein needs. If you want to endulge in a sweet snack every once in a while, these can be easily stored in a box and placed in the freezer without having to worry about them becoming disfigured.

1 cup cashews
1/2 cup oats (oat flour can also be used)*
1/4 tsp himalayan salt
1/2 tsp cinnamon
3 tbsp date honey (silan)
1/2 tsp vanilla extract
1/4 cup vegan chocolate chips (I prefer Enjoylife's Mini Chips)*

Place the cashews and oats in a food processor and process until preferred texture. I prefer my dough balls to be a bit chunky, however you can process the almonds and oats until they are a fine flour texture.

Place the processed cashews and oats in a bowl, adding the salt and cinnamon.

Stir in the date syrup and vanilla extract, until all the ingredients are well combined.

The mixture should be able to stick together, if not add more maple syrup.

Mix in the chocolate chips and start forming dough balls.

Place the rolled dough balls on a plate or container lined with parchment paper and put them in the fridge to be stored.
Note
*If you are gluten free, make sure to check that you are using gluten free oats.
*If you cannot find vegan chocolate chips, chopping up a vegan chocolate bar also works.
*I like to double the recipe to make a big batch so that I can place them in the fridge for later.
