Chocolate chip cookie dough BALLS

 

 

I have always been a sucker for dough balls, or for dough in general if I'm being honest. I was always the kid who couldn't wait to lick the spoon. As I got older, this love for dough didn't end. So when I became vegan I obviously had to find a recipe for vegan dough balls!

 

This recipe has been my saviour for the past few months. Whenever I get a craving for something sweet, I can always depend on the batch of ready made dough balls in the fridge to help me out. I try to restrict myself to only having 1, but I would be pleased with myself if I managed to keep it down to 3 at a time.

 

The delicious bites are filled with nutty protein that will satisfy part of your daily protein needs. If you want to endulge in a sweet snack every once in a while, these can be easily stored in a box and placed in the freezer without having to worry about them becoming disfigured.

 

 

 

 

- Ingredients -

Cook time: 0 mins

Servings: 36 

 

1 cup cashews

1/2 cup oats (oat flour can also be used)*

1/4 tsp himalayan salt

1/2 tsp cinnamon

3 tbsp date honey (silan)

1/2 tsp vanilla extract

1/4 cup vegan chocolate chips (I prefer Enjoylife's Mini Chips)*

 

 

 

 

- Instructions -

 

  • Place the cashews and oats in a food processor and process until preferred texture. I prefer my dough balls to be a bit chunky, however you can process the almonds and oats until they are a fine flour texture.

  • Place the processed cashews and oats in a bowl, adding the salt and cinnamon.

  • Stir in the date syrup and vanilla extract, until all the ingredients are well combined.

  • The mixture should be able to stick together, if not add more maple syrup.

  • Mix in the chocolate chips and start forming dough balls. 

  • Place the rolled dough balls on a plate or container lined with parchment paper and put them in the fridge to be stored.

 

Note

*If you are gluten free, make sure to check that you are using gluten free oats.

*If you cannot find vegan chocolate chips, chopping up a vegan chocolate bar also works.

*I like to double the recipe to make a big batch so that I can place them in the fridge for later.
